This fresh salsa is vibrant and will liven up any lunch bowl or wrap.
Quick & easy
Ingredients:
- 2 cups chopped tomatoes (or a combination of tomatoes and fresh fruits; peaches, nectarines, mangoes, grapes or pineapple)
- 1 cup chickpeas (or other)
- ¼ cup chopped yellow or white onion
- 2 tablespoons chopped fresh coriander or mint
- 2 tablespoons lime / lemon juice
- 1 to 2 jalapeño or chillies, stemmed, seeded, and finely chopped
- ¼ teaspoon Himalayan rock salt
Method:
- Place all ingredients in a bowl, toss well, and serve chilled or at room temperature.
- Enjoy as a starter to add to wraps or lunch bowls.
