Bean salsa

This fresh salsa is vibrant and will liven up any lunch bowl or wrap.

Quick & easy

Ingredients:

  • 2 cups chopped tomatoes (or a combination of tomatoes and fresh fruits; peaches, nectarines, mangoes, grapes or pineapple)
  • 1 cup chickpeas (or other)
  • ¼ cup chopped yellow or white onion
  • 2 tablespoons chopped fresh coriander or mint
  • 2 tablespoons lime / lemon juice
  • 1 to 2 jalapeño or chillies, stemmed, seeded, and finely chopped
  • ¼ teaspoon Himalayan rock salt

 

Method:

  1. Place all ingredients in a bowl, toss well, and serve chilled or at room temperature.
  2. Enjoy as a starter to add to wraps or lunch bowls.
