Sweet Potato Toast with Chicken, Corn, Black Beans, Avo, Salsa & Pan-Fried Egg

This meal is packed with ingredients that naturally support healthy hormones by providing a balance of protein, healthy fats, fibre, and slow-releasing carbohydrates.

Ingredients:

Base:

  • 2 large sweet potatoes
  • Coconut oil
  • Salt & pepper

Toppings:

  • 1 cooked chicken breast (shredded or chopped)
  • ½ cup corn (fresh, frozen, or canned)
  • ½ cup black beans (drained & rinsed)
  • 1 avocado (sliced or mashed)
  • 2–3 eggs (one per serving)
  • Coconut oil or butter for frying eggs
  • Salt & pepper

Salsa:

  • 2 tomatoes (diced)
  • ¼ red onion (finely chopped)
  • 1–2 tbsp fresh coriander (chopped)
  • Juice of ½ lemon or lime
  • Salt & pepper
  • Optional: chilli

Method:

Bake the sweet potato “toast”

  1. Slice sweet potatoes lengthwise into 1–1.5 cm thick slices
  2. Lightly brush with olive oil and season with salt & pepper
  3. Place in oven at 190°C for 15 – 20 minutes, flipping halfway
  4. Cook until soft in the center and lightly crisp on the edges

Make the salsa

  1. Mix tomatoes, red onion, coriander, and lemon/lime juice
  2. Season with salt & pepper
  3. Set aside to let flavours develop

Heat the filling

  1. In a pan, warm the chicken, corn, and black beans together
  2. Season lightly with salt, pepper (and optional cumin or paprika if you like extra flavour)

Pan-fry the eggs

  1. Heat a little oil or butter in a pan
  2. Fry eggs to your preferred style (sunny-side up or over-easy works best for this dish)
  3. Season with salt & pepper

Assemble

  1. Place air-fried sweet potato slices on a plate
  2. Top with warm chicken, corn, and black bean mixture
  3. Add avocado slices or mash
  4. Spoon over fresh salsa
  5. Finish with a pan-fried egg on top
