Rice paper wraps

Servings: 4  |   Prep time: 20 min |  Soaking time per wrap: 1 min

These are light, fresh and very quick to make. Fill them with all your favourite fresh fillings.

Rice wraps are naturally gluten-free

Ingredients:

  • 8 rice paper wraps
  • 1 ripe avocado
  • 2 large carrots
  • 2 courgettes and lettuce
  • 3-4 pickles
  • 1 cup butter bean dip / Hummus
  • 1 tablespoon herbs / microgreens or choice
  • Edible flowers (optional)
  • Seeds (Sesame / Pumpkin)
  • Himalayan salt (to taste)
  • Balsamic vinegar

Method:

  1. Slice fresh carrots, courgettes, lettuces and pickles into fine slices. Keep them fresh or sauté the carrots and courgettes for a minute or two.
  2. Place one rice paper wrap in a large flat dish filled with cold water and allow to soften for about 1 minute. Soak one at a time.
  3. Remove from water and place on your serving plate.
  4. Fill your wrap with vegetables, bean dip and pickles and season.
  5. Add seeds.
  6. Dip in balsamic vinegar and enjoy.
