Cauliflower soup

Cauliflower is packed full of nutrients, fiber and antioxidants. This is such a wonderful filling dish and can be topped with all your favourites; tomato relish, caramalised onions in balsamic glaze and beans of choice.

Delicious & packed with nutrients

Ingredients:

  • 1 large white onion
  • 1 clove garlic
  • 7 cups vegetable broth (see recipe) or water & herbs
  • 4 cups cauliflower florets
  • ½ cup cubed sweet potato
  • ½ cup beans (butter/cannelloni, or of choice)
  • 1 tablespoon nutritional yeast
  • 1 tablespoon mustard powder
  • Salt and pepper to taste

Method:

  1. Start your pot on medium/high heat, and saute the onions until translucent. Add the minced garlic, stirring through for a few more minutes.
  2. Add ¼ cup of vegetable broth / water with herbs to incorporate the flavour.
  3. Reduce heat and add the remaining ingredients bringing the pot to a constant simmer. Leave for 15 minutes and turn off heat.
  4. Use a blender to make a smooth consistency and then place the pot onto a low heat for about 6 minutes to reduce further.
  5. Add seasoning to taste.
