Beef & Vegetable Soup

This hearty soup is packed with high-quality protein, fibre, and colourful vegetables to support balanced blood sugar, reduce inflammation, and nourish your hormones.

This soup is PCOS-friendly

Ingredients:

  • 500–700g beef (stewing beef or chuck), cubed
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, chopped
  • 1 cup green beans, chopped
  • 1 red pepper, chopped
  • 1 cup mushrooms, sliced
  • 1 can chopped tomatoes
  • 1.5–2L beef stock (low sodium if possible)

Spices & seasoning:

  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp dried thyme or oregano
  • Salt & pepper to taste

Optional additions (great for PCOS):

  • 1 cup spinach or kale (added at the end)
  • ½ cup lentils or chickpeas (extra fiber + protein)
  • Fresh parsley or coriander for garnish

Method:

  1. Brown the beef
    Heat olive oil in a large pot. Add beef and brown on all sides. Remove and set aside.
  2. Build the base
    In the same pot, sauté onion for 3–4 minutes. Add garlic and ginger, cook for 1 minute until fragrant.
  3. Add vegetables
    Add carrots, celery, peppers, mushrooms, and zucchini. Cook for 5–7 minutes to soften slightly.
  4. Spice it up
    Stir in turmeric, paprika, cumin, and herbs.
  5. Simmer
    Return beef to the pot. Add chopped tomatoes and stock. Bring to a boil, then reduce heat and simmer for 45–60 minutes until beef is tender.
  6. Finish
    Add green beans and optional lentils/chickpeas. Simmer another 10–15 minutes.
    Stir in spinach/kale right at the end.
  7. Season & serve
    Taste, adjust salt and pepper, and top with fresh herbs.
