Warm pumpkin porridge

This is a wonderful warm bowl of goodness, and soon you will only want to eat this for breakfast during your luteal phase. This recipe is from Doctors Beyond Medicine.

Great comforting recipe for your luteal phase

Ingredients:

  • ½ cup almonds/ walnuts or sunflower seeds (To make it nut-free)
  • 1 cup cinnamon roasted pumpkin or butternut squash (precooked)
  • 1 ½ cup unsweetened nut / oat / organic coconut milk
  • Optional toppings:
  • Chopped up nuts for texture
  • Cinnamon
  • Currants / raisins / 1 chopped-up date
  • Nutmeg
  • Coconut flakes

Instructions:

  1. Chop butternut or pumpkin into smaller chunks and boil for about 10 – 15 minutes, until cooked.
  2. Soak nuts overnight, drain and place in a blender or food processor.
  3. Add cooked butternut or pumpkin into your blender with 1 cup of nut milk, and blend into a porridge-like consistency.
  4. Scoop the creamy bowl of goodness from the blender and place in a small saucepan with additional almond milk and heat for 5 minutes.
  5. Add toppings and enjoy!
