Pasta with broccoli sauce

If you are craving mac & cheese, this creamy pasta is for you. Broccoli is packed with vitamins and minerals, is high in antioxidants and assists in reducing inflammation.

Diary-free & deliciously creamy

Ingredients:

  • 1 broccoli head (about 2 cups)
  • ¼ cup water
  • ½ cup coconut cream (Or coconut milk/ almond milk)
  • 2 teaspoons nutritional yeast
  • 1 red onion
  • 1 teaspoon crushed garlic
  • Salt and pepper to taste
  • 1 cup of whole wheat or gluten-free pasta

Method:

  1. In a medium saucepan boil water to cook 1 cup of pasta.
  2. In a separate pot fry the onions on medium heat, until translucent and soft.
  3. Add garlic, nutritional yeast, salt and pepper to taste. Stir
  4. Add broccoli with 1 cup water and steam with the lid on for about 5-8 mins, or until broccoli is soft.
  5. Remove from the heat and add the coconut cream / milk or almond milk.
  6. Transfer the mixture to a blender or blend with a stick blender in the pot until smooth.
  7. Add sauce to your cooked pasta and serve hot.
