Blueberry Coconut Milk Panna Cotta

Ingredients:

  • 800 ml full-fat coconut milk
  • 300 g fresh blueberries
  • 80 ml (â…“ cup) honey
  • 2 tsp vanilla extract
  • 1 tbsp lemon juice
  • Pinch of salt
  • 3½ tsp powdered gelatine
  • 60 ml cold water

Method:

  1. Sprinkle the gelatine over the cold water and allow it to bloom for 5–10 minutes.
  2. In a saucepan, combine the blueberries, honey and lemon juice. Cook over medium heat for 5–7 minutes until the blueberries have softened and burst.
  3. Blend the blueberry mixture until smooth using a stick blender or countertop blender. For an extra-silky panna cotta, strain the purée through a fine sieve.
  4. Return the blueberry purée to the saucepan and stir in the coconut milk, vanilla and salt. Heat gently until steaming, but do not allow it to boil.
  5. Remove from the heat and whisk in the bloomed gelatine until completely dissolved.
  6. Divide the mixture evenly between six serving glasses or ramekins.
  7. Refrigerate for at least 6 hours, or preferably overnight, until fully set.

To serve:

Garnish with fresh blueberries, toasted coconut flakes, hazel nuts and fresh blueberries. Drizzle with a little extra honey if desired.
