Ingredients:
- 1 cup oats (OR ½ cups oats & ½ cup bran)
- 1 free-range egg
3/4 cup water or almond milk - 2 teaspoons baking powder
- 1 teaspoon vanilla essence
- 1 tablespoon coconut oil (melted)
- 1 tablespoon honey
Pinch of salt
(Makes 6)
Instructions:
- In a coffee grinder or food processor, grind dry oats and bran together into a fine powder.
- In a medium mixing bowl whisk egg, add melted coconut oil, water, honey and vanilla essence and mix.
- Add the fine oats and bran powder, baking powder and salt, and mix until combined.
- Allow to stand for about 10 minutes.
- Warm up the waffle pan and bake waffles until golden and crispy.
Enjoy with fresh fruit like bananas, berries or figs or add nut butter, maple syrup or honey.
