Guilt-free waffles

Servings: 3  |   Prep time: 15 min |   Cooking time: 15 min

Gluten & dairy-free

Ingredients:

  • 1 cup oats (OR ½ cups oats & ½ cup bran)
  • 1 free-range egg
    3/4 cup water or almond milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla essence
  • 1 tablespoon coconut oil (melted)
  • 1 tablespoon honey
    Pinch of salt

    (Makes 6)

Instructions:

  1. In a coffee grinder or food processor, grind dry oats and bran together into a fine powder.
  2. In a medium mixing bowl whisk egg, add melted coconut oil, water, honey and vanilla essence and mix.
  3. Add the fine oats and bran powder, baking powder and salt, and mix until combined.
  4. Allow to stand for about 10 minutes.
  5. Warm up the waffle pan and bake waffles until golden and crispy.
    Enjoy with fresh fruit like bananas, berries or figs or add nut butter, maple syrup or honey.
